SHEKI HALVA

There are different opinions about the origin of Sheki halva. Some claim that the recipe appeared during the first Sheki Khanate; others say that it was invented by local residents. Sheki halva is made from rice flour, from which a liquid dough is made. This dough is then poured into copper baking dishes with a copper funnel. Halva should be prepared in a copper bowl. 10-12 layers are prepared and placed on top of each other. The surface is covered with an even layer of hazelnut mix. Then five more layers are added, and the resulting surface mixture is colored with saffron and baked for about 15-20 minutes. Finally, syrup is made from granulated sugar and poured evenly over the halva.
