
Ingredients:
1 cup – french green lentils, also known as Puy lentils
Veggies – french green lentils, also known as Puy lentils
Bacon – Bacon adds a touch of smoky and salty flavor to this lentil soup, but can be omitted for a vegetarian/vegan version!
Veggies 1 onion, 2 gloves garlic, 1 medium carrot, ½ celery and 1 large leek, but you can use whatever veggies you have on hand!
Herbs – 1 or 2 Bay leaves (dried or fresh) and fresh thyme 1/2 teaspoon
Canned Tomatoes
Broth chicken or vegetable
Olive oil
salt and pepper
Step 1 – Sauté the Veggies.
Add veggies, a pinch of salt and pepper, and cook until softened.
Stir in garlic, cooking until fragrant.
Step 2 – Cook the Soup.
Stir in the lentils, then the crushed tomatoes.
Add the herbs and broth, then cook until the lentils are tender.
Season to taste.
